Just hop over to 'the Continent' and you should be able to find several countries quite quickly: e.g. Belgium, France, Netherlands, Germany and Luxemburg are not too far from the UK.
There have been geocachers who even found caches in 14 different European countries in 24 hours, so.... Image may be NSFW.

If you want to stick to islands close to the UK: Next to Jersey, also Ireland, Guernsey and Isle of Man all count as a different country...
